As some of you might know I try to avoid eating pasta as a general rule, for many reasons, but I do enjoy it sometimes. Gnocchi hold a very special place in my heart, I used to love them as a kid and I still do! Today I thought I’d share one of my favourite ways to eat them: with green asparagus, mushrooms, basil and cured cheese crumbs. This is a very simple recipe that you make in ten minutes; ideal for when you are starving and just can’t be bothered with anything too complicated.

Gnocchis Recipe

Ingredients for 2

200gr gnocchi

150-200gr mushrooms

10-15 green asparagus

1 teaspoon honey

Olive oil

Maldon salt

Crushed Black Pepper

50gr Mature/cured cheese

Basil leaves

Place a frying pan on medium heat with a drizzle of olive oil or coconut oil. Cut the asparagus in 3cm pieces (get rid of the white parts) and throw them in. Add the honey, salt and pepper. Cook for a couple of minutes until they turn vibrant green. Now cut mushrooms in half and add them to the asparagus. Cover with a lid for one to two minutes (toss once or twice). Turn off the heat.Meanwhile cook the gnocchi in boiling water (this should take 2 minutes aprox, but check the instructions). When the vegetables are ready, simply mix them with the gnocchi, the cured cheese (I like to crumble it with my hands) and the basil leaves.
