One of my favourite dishes is this melon and avocado gazpacho. It is very original in flavour and very refreshing, lovely for this time of the year!
Ingredients for 4 people (small-ish portions)
500gr ripe melon
1 green pepper (light green)
1 ripe avocado
2-3 tablespoons of vinegar
1-2 tablespoons extra virgin olive oil
Peel the melon, get rid of the seeds and cut it in squares. Peel the cucumber and green pepper and also cut them in squares. Do the same with the avocado.
Put all the ingredients in a blender and blend until smooth. Now put them through a manual food mill into a bowl, in order to get rid of any lumps, skins, or seeds that might be left. Finally add the vinegar and olive oil, salt (make sure to use quite a bit, otherwise it will be too sweet), and black pepper. Serve as it is or keep it in the fridge for a while until it cools a little. If you prefer you can add some ice cubes, although I find that my gazpacho gets too watery if I do that. Add basil leaves, a little drizzle of olive oil, maybe some croutons? Or a bit of yogurt? I’ll leave it to your imagination!
