A couple of days ago I was at the market doing my weekly shopping and saw these gorgeous seasonal persimmons. I bought them and thought of using them in a new recipe. I’m not sure why I decided to pair it with some Mahonés cheese, and the combination was truly great. I also had in mind trying to make a galette at home, so I thought this would be the perfect time. The result was a beautiful persimmon, cheese and thyme golden galette. ideal for any time of the day to enjoy hot or cold. You can of course change the filling as you please. I think next time I’ll try with brie, butternut squash, red pepper… Or even only fruits and maybe chocolate? Oh my… I’m drooling.

For the galette pastry:

 

300gr flour

175gr cold unsalted butter

100ml ice cold water

A pinch of salt

1 teaspoon of sugar

1 egg to paint the galette and give it that gorgeous golden colour.

 

For the filling:

 

2 persimmons

100gr of cheese

A few teaspoons of rye flakes

Thyme

Salt and pepper

 

 

Start by preparing the pastry. Mix the flour, salt and sugar together in a bowl. Now add half of the butter cut in small bits and mix it in with your hands or an electric mixer. Once it is blended it, add the other half of the butter. Finally incorporate the ice cold water and mix with your hands until you get a consistency that allows you to make a ball with it. Now  cover your pastry in cellophane paper, flatten it slightly and place it in the fridge for half an hour.

Meanwhile preheat the oven to 200ºC. Start cutting the persimmons in thin slices (you can leave the skin) and the cheese. Once you are ready to take the pastry out of the fridge, flatten it out with a rolling pin to a 1-2 cm thickness.  I recommend that you do this on top of baking paper on a baking tray.

Now start placing the filling ingredients as shown above building a ‘tower’ and leave 8 to 10cm of pastry all around so you have enough space to fold afterwards. Now ‘close’ the galette by folding de sides as shown in the picture above. Finally paint the galette with a whisked egg to get that golden finish. Place in the oven for 30 min.
